The restaurant “Munken Bistro” was in a process of renewing themselves, and at the same time moving to new premises. “Munken Bistro” is a fusion restaurant between the Scandinavian and Peruvian kitchen. The task was then to respond to this renewal in a way that reflects their relation to both cultures, their way of producing and presenting their food and the experience they what to give to their customers.

The organisational concept of the restaurant is based on four main elements

The organisational concept of the restaurant is based on four main elements. 1. The kitchen theatre, placed on a mezzanine level with overview of the restaurant floor, establishing a connection between service and being served. 2 a “cave” acting as a “chambre séparée”, 3. A  “gallery wall” that could change over time. And 4. A wooden box containing technical installations, storage and restrooms, with a cut away serving as a bar and the waiter’s base.

One of the main challenges was to generate enough service area, and at the same time having a satisfying balance between kitchen, storage, restrooms, and wardrobe, providing an efficient floor plan accommodating both for the customer experience, and the day-to-day operations for the restaurants staff.
